Wedding cakes are the most delicious detail of your wedding, some couples have a traditional three tier iced number, while some have an array of desserts on offer for guests, while others don’t worry about having a cake at all.

Let your cake be free from smooth icing, think ruffles, butter cream or maybe no icing at all like the naked wedding cake. Perhaps you could add some cute toppers to add personality too.

{w} Hi Claire, could you firstly tell {www} readers a little bit about you?

 

I am Claire the founder of la Dinette, a London based bakery that specialises in Macarons and Cannelés de Bordeaux. I am French and moved to London in 2005 after studying Art Management in Paris. I first came to London to stay for a year or so to improve my English but I met my husband here and have never left!

Finding a job in my field was tough so I ended up working in the food industry which made me realise how much I loved food and that cooking could also be a way to be creative.

{w} What do you love/dislike about your job?

 

I love running my own business. I feel really lucky and privileged to be able to organise my life how I want it. I have a 10 month baby and working from home means that I can spend a lot of time with him which is amazing, but it also means that you have to be super organised and disciplined. What I really love about my job is the feedback I get from my customers, making people happy with sweet treats is pretty rewarding!

As many of you long time readers may know, i am a coeliac. This means being-a-nightmare-to-cater-for. Well i feel like i am a nightmare, but i probably am not really hehe!

Anyway, this week i wrote up two real weddings where the bride had mentioned gluten free, it made me smile and i thought i should write about catering for dietary requirements seeing as i know a little on the topic ;-) and i wanted to help with any worries or questions you may have.

You yourself may have a special diet or someone you love more than likely has. So there is a pretty high probability you will need to cater for someone that needs something extra.

As someone with dietary needs, i just want to say, we are not being a pain honest ;-) But in all seriousness if your guest can’t relax on the day because they are worried about the food, then they won’t be enjoying themselves to the max. And i know WWW readers want their wedding to be having a full on party vibe going on.

So what do you do? Well when arranging your invitations be sure to mention that with the RSVP they reply with any dietary requirements. Try not to stress if you have 101 different requests, at the end of the day it is your day. But to focus on serious requirements or health requests rather than the “bob doesn’t like brussel sprouts” comments. (more…)

{w} Hi Jemma, could you firstly tell {www} readers a little bit about you? 

I’m Jemma and I own Crumbs and Doilies with my partner Sam. I started Crumbs and Doilies in 2006 and we have been making beautiful hand-made cupcakes for peoples’ weddings ever since. We are a really small team of 6 and we bake our cupcakes in Wandsworth in South West London. Every single cupcake is hand-made in small batches. We think this is what makes them taste so good, as well as the incredible ingredients we use. Many of our ingredients are organic, though we are not an organic cupcake bakery. It’s important that we use the best ingredients available and some of them happen to be organic, though that is not our main focus. Great tasting cupcakes is though!

{w} What do you love/dislike about your job? 

I love the creative process. I love getting a brief or a mood board from a bride and translating it in to cake. It’s a real challenge. I love my team. There are only a few of us and we all have a great time both in and out of the kitchen. I love creating new flavours with the C&D gang. Not least because that is the only time I have a genuine excuse to eat lots of cupcakes! I don’t like clearing up at the end of the day – the icing sugar gets EVERYWHERE. I don’t love the early mornings but after 6 years I’m used to it. Even on the rare occasions when I get a lie in, I can only manage 8am at the latest!

{w} How did you get into baking and into the wedding industry?

I was a late starter with baking but once I discovered my passion for it I went to work at Rose Bakery in Dover Street Market in Mayfair. After a while I wanted something more so I handed my notice in and got a stall at Brick Lane’s Sunday UpMarket selling all my baked treats. When it became clear that the cupcakes were the big hit, I stopped making all the other stuff and cranked up the cupcake end of things. I used to have a blackboard on my stall that said I could do wedding cupcake towers and I used to give my number to people on little paper doilies before I had a website. Wedding cupcakes were always something I wanted to do because I have always hated traditional wedding cakes! You get a tiny piece which is mostly marzipan and it rolls around your handbag for a week or two, wrapped in a tissue until you find it and eventually throw it in the bin. I think if you are going to spend the money on a wedding cake at all it should be something beautiful, which people look forward to eating and rave about afterwards.

I thought this morning i would start the day by introducing to the fantastic Big Little Things. Big Little Things is pretty much a one stop style shop for couples, with flowers, an award winning bakery,  stationery, gifts and accessories, all to help you in creating your wedding vision.

 

{w} Hi Big Little Things, could you firstly tell {www} readers a little bit about you?

We are Sarah and Fran who together are ‘Big Little Things’. We are a bespoke wedding and events service. We are quite a diverse ‘one stop shop’ if you will. Our main areas of expertise are couture wedding cakes, wedding flowers, bridal accessories and finishing touches. We primarily design and create one off pieces, although we do have an online shop too which offers unique and on trend items. We pride ourselves on our products being in the main handmade by us in our home county Shropshire, although we travel throughout the UK and further afield when needed. We like to keep made in the UK alive.

{w} What do you love/dislike about your job?

It’s a joy to be creative for a living and to be able to design and create someone’s perfect bouquet, ideal wedding cake or timeless accessories. It’s a very emotive occupation and you see things through the brides (and on occasion the grooms!) eyes. It’s sometimes hard to switch off! It’s hard to control when inspiration will present itself and waking up a 3am to sketch is not unknown. We both suffer with this and love and hate it in equal measures!
