Morning lovelies… it’s that time for me to ramble on again ;-)
As some of you know i am a Coeliac, which means i have to stick to a strict gluten free diet, which can be tricky. But for my health it is paramount. Since i was diagnosed 4 years ago my health has been improving slowly but surely, and once or twice a year i head to the hospital to get reviwed. This usually consist of a blood test to check all is A-Ok.
Anyway, i had my review a couple of weeks ago, my iron levels are finally improving, but i am stuck with the iron tablets for a while yet hehe! This time though my white blood cell count is low, which is a bit of a worry and hopefully it is down to a cold i have had. But this week i found out i have low vitamin D, so more pills to pop, booo.
Then around a month ago, i found something in my boob that didn’t feel right. I went to the doctors, who referred me to hospital to have an ultrasound as they wasn’t sure what it was and because my mum had breast cancer last year. Pretty scary stuff. I wasn’t that comfortable sharing it on here as boobs seem private don’t they? But i share everything else with you guys, so i thought why not hehe! Anyway it was all fine, but having a scare like that put things into perspective. It makes you realise you have to look after yourself, for you and your loved ones. (On a side note, girls know your boobs, a mistake i have made, and will not be making again hehe! If you are in any doubt, go straight to your GP too.)
Why am i telling you all of this? Well recently i seem to be on a little health kick, not in a major way. But i think in the past few weeks i’ve come to realise, what you put into your body, you get out of it. Yes i still gorge on chocolate, greasy foods and general naughties, but i’ve also been trying to slip in some healthy super foods. It hasn’t even been a conscious decision, but i think recent health worries/realisations have prompted me in some way.

So i have been trying out some new foods.
I kept hearing about avocado on toast, so i tried it and it was scrummy. Head to google for lots of recipe ideas, it is such a quick lunch. I added the egg too, avocados and eggs are packed full of vitamins so i felt smug all day that i’d eaten it hehe.
I saw a programme on watercress and the amazing benefits from eating it, so i have been adding it to my shopping basket. When having pasta or a sandwich i heap it on for a peppery kick and to give me some goodness.

Salad. Vegtable Soup. Roast Dinner. Coleslaw.
My new love is long stemmed broccoli. I’ve never been keen on broccoli, but i have gotten a little addicted to this. We used to cook our veg until it was mush, but we have started to go al dente… and we love it. My veg to meat/potato ratio has gone up too. I hope this benefits our health.
Veggie soups are a super fast and nutritious lunch i enjoy too. I really must make a homemade one soon too. I love salad and in the summer got into homemade coleslaw. Now i know the mayo part isn’t too healthy but the raw veg must do some good.
We like to make 95% of our meals ourselves and A eats the same as us. I always make fresh pasta sauces and meat/two veg meals. It’s important for me to know something is totally gluten free so making it myself reassures me it’s safe to eat. Of course i am gluten free, which does have its health benefits and drawbacks too. But i like to think i eat healthily. I eat naughty food a lot too, and i think that’s OK in moderation. Although i don’t each much fruit oops! For me eating that little bit healthier is all about giving me more energy, and hopefully kicking my eczema to the kerb too.
Anyway, i am feeling good about all those vitamins flying around inside me hehe! I hope they do make a difference. And i am hoping to feel better than ever if i keep it up.

Never left a comment on here before but this has propted me to beacuase a) I'm trying to eat better in order to look better in The Dress, and b) my fiance was diagnosed as being coeliac 11 months ago, so we understand completely! It's not that bad if you know how to and enjoy cooking, as like you said, you control what goes into our food. Re eating helathier, I've found that what helps us it to always ensure we add either a fruit or veg to every single meal, which is easy, realistic and ensures we get at least three a day. As I type I'm eating a simple Nigella pasta dish, just a whizzed up sauce added to the cooked pasta, so I roasted some tomatoes with garlic and added them, which are very yummy!
Good luck with your quest, keep it up, and remember on those days when all you want is a big slice of 'proper' toast and better, that your body is really thanking you for staying gluten free!
